Really easy cake recipes?!
Problem is, I'm not the best cook in the world. I'm good at making refrigerator cake but I think that's about the extent of my skills in the kitchen.
My Mum really loves coffee and walnut cake, so I thought I'd like to bake her a small cake for Mother's Day but all the coffee and walnut cake recipes I've seen online and in cookbooks are difficult!

Hi Melissa, You could start with cookies with their names iced onto them and once you have had some practice work up to cakes. You need quite a lot of equipment to make different sized and shaped cakes. The easiest recipe for the coffee and walnut cake would be one in which you would simply "doctor" a boxed yellow cake mix. Simply substitute cold brewed coffee (full-bodied) for the water called for in the directions on the back of the box. After mixing the batter, add 1 cup of finely chopped walnuts.

Well, you can go to a store and buy those cake mixes in the cake isle. Those are really easy! No work really is needed, and they taste AMAZING! They only cost like 5 bucks.
And, in order to find a walnut cake, go onto www.allrecipes.com and search "walnut cake". A lot of choices will pop up! I love that website! Great for cooking!

I just bought this miracle item the Easy Bake Oven. It is fantastic it comes with little mixes to make all sorts of cakes and biscuits. I just put a cake in and it will be done next week.

1 1/2 cups all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
1 egg
1/4 cup vegetable oil
3/4 cup milk
Cinnamon Crumb Topping:
1/3 cup all purpose flour
1/2 cup sugar
1/4 cup butter, softened
3/4 teaspoon cinnamon
Coconut Nut Topping:
2/3 cup brown sugar, packed
1 cup flaked coconut
1/3 cup butter, softened
1/4 cup heavy cream
1/2 cup finely chopped nuts (optional)
Preheat oven to 375°F.
Combine dry ingredients for cake. Beat together egg, oil and milk, then add to dry ingredients.
Brush a square or circular pan with butter. Dust the pan with flour and tap out any excess. Fill pan with cake batter and level off top with a spatula. If using the Cinnamon Crumb Topping, spread over top of cake and bake.
If using Coconut Nut Topping, combine ingredients after cake is baked and spread over cake while still warm. Broil on low (just under top burner in oven) til lightly golden. Watch carefully so as not to burn.
Bake for 20-25 minutes.
Easy Microwave Chocolate Cake
Ingredients
* 3 tablespoons butter, softened
* 1/4 cup white sugar
* 1 egg
* 1 teaspoon vanilla extract
* 1/4 cup milk
* 1/2 cup all-purpose flour
* 2 tablespoons cocoa powder
* 1/4 teaspoon baking powder
* 1 pinch salt
Directions
1. Spray a medium microwave-safe bowl with non-stick spray and set aside. In a mixing bowl, combine the butter, sugar, egg, vanilla extract, and milk; blend together. Combine the flour, cocoa powder, baking powder and salt; blend into the mixture until smooth. Pour into greased bowl.
2. Cover and cook in the microwave on high for 2 to 2 1/2 minutes, or until cake springs back when touched. Since all microwaves cook differently, adjust the cooking time to accommodate your machine. To serve, let the cake cool five minutes, then cover the bowl with a plate and turn both bowl and plate upside down so the cake falls onto the plate.
