Chick pea flour crepes. Can be cooked in 5 minutes. Provides complementary protein when served with grain dishes, so it's very useful recipe for vegetarians to know.
Just make a thin crepe batter by mixing chick pea flour (same thing as garbanzo bean flour) with water. Put some olive oil in frying pan, sauté pan, crepe pan, etc. Fry as you would ordinary crepes or pancakes. (They should be thinner than an American style pancake.) It may take some practice to get the heat, amount of oil, consistency of batter, etc right. But once you get the hang of it, they're very good. Delicately crisp on outside and around edges, and soft in middle.
