Pork is very reasonably priced.
I would get a few pounds of whatever pork is on sale (country spare ribs, picnic shoulder roast, pork steaks) and put them in a crockpot (or you can do it in the oven) with sauerkraut on the bottom of the pan, then the pork, add water until it is as high as the top of the sauerkraut, salt and pepper. Cook on low in the crockpot for 8 hours or in the oven at 400 for 2 hours (covered). Serve with mashed potatoes.
Then make sure you made extra pork when you do the above and then you can get some corn tortillas and make carnitas tacos, tosadas, burritos, enchiladas, with the left over meat. It will be very tender to do these recipes. Refried beans to make these things is very reasonably priced.

Casseroles are the cheapest and most versatile. You can use canned tuna, beef, or chicken in them, or leftovers.
Basic Casserole Science
2 cups starch (cooked rice, pasta, potatoes)
2 cups protein (cooked, drained meat, or cheese)
1 cup vegetables (frozen or canned)
1 can condensed soup
1/2 cup milk
Topper (crushed chips, croutons, cheese or breadcrumbs)
Cover and bake @ 375° for 45 minutes.
I like jambalaya, and I make a similar dish that doesn't really follow a recipe. This isn't jambalaya, but it is somewhat like it. I just use leftover meat-roast beef, chicken, or sausage (about 1-2 cups) , add 2 cups dry rice and 3 and a half cups of water, and add 1/2 cup salsa. Put in whatever spices I want, bring to a boil and reduce heat to low. Cook for about 20 minutes, and you have a frugal, filling meal. This goes really well with cooked, dried beans.
I understand the situation your in, im going through the same thing. You can serve turkey for a day or two and then with the left over scaps you can make turkey casserole. Its delicious and filling
I enjoy chili....with or without beans, with or with out meat. I serve it plain with cornbread, over rice, and mixed with corn, chili powder, macaroni, and cheese on the third or fourth day. Good luck!
