Generally, my husband just mixes together a few cans of different types of beans, some veggie crumbles if we have it, corn veggies (smaller ones like green beans and peas and maybe frozen carrots if we have potatoes that need to be used, we use those, too) and whatever spices seem good at the time (besides, chili spice and taco spice).

However, I like Debbie's recipe and will alter it for our tastes. The lager beer did me in. I would have liked this recipe when I was pregnant and was happy for the taste of beer. (We found some good alcohol free beers at Whole Foods.) Now that I'm exclusively breastfeeding my three-month-old the beer in the chili sounds good. I do drink some (provided he's sleeping and/or I have a bottle ready), so the beer IN the chili and WITH the chili sounds really good. (A lager in the chili and a stout with it.)

Thank you.

The following contains all your Ingredients (Although it should have 1 tablespoon ground cumin as well, if no cumin you can go without though). I like to add a bit of cocoa powder to the mix as well, but thats just my preference.

* 2 pound ground beef
* 2 tablespoons olive oil
* 1 large onion, chopped, divided
* 1 banana pepper, chopped
* 2 jalapeno pepper, seeded and minced
* 3 cloves garlic, minced
* 3 (15 ounce) cans chili beans
* 1 (14.5 ounce) can diced tomatoes
* 1 (6 ounce) can tomato paste
* 1 (8 ounce) can tomato sauce
* 1 (12 ounce) bottle lager-style beer
* 2 tablespoons cornmeal
* 1 cup water
* 1/4 cup chili powder
* 1/2 teaspoon cayenne pepper
* 1 tablespoon salt
* 1 1/2 teaspoons ground black pepper

Directions

1. Cook ground beef in a large skillet over medium-high heat until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
2. Meanwhile, heat the olive oil in a large pot over medium heat. Stir in 3/4 of the onion and all of the green pepper, Banana pepper, jalapeno pepper, and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir the drained meat into the onion mixture along with the green onion, chili beans, diced tomatoes, tomato paste, tomato sauce, beer, and water. Sprinkle with the cornmeal, then season with chili powder, cayenne pepper, salt, and black pepper.
3. Bring to a simmer over medium heat, then reduce heat to medium-low. Simmer at least 2 hours, stirring occasionally. leave to cool and refrigerate overnight.
4. Reheat the chili over medium heat until it begins to simmer again. Top individual servings of chili with cheese and remaining chopped onion.

It doesn't sound hot to me. Jalapeno's aren't that hot, especially if you take out the seeds and the white part inside. That's where the heat is. Banana peppers have almost no heat. Cayenne, use a little for flavor and it won't be too hot.

Just brown your meat in canaola or veggie oil. Add the onion and peppers and saute for 10 minutes, then the garlic and saute on low for 1 minute. Add the seasonings and tomato sauce and low sodium beef broth, or water if that's all you have. Your seasonings should be heavy on the chili powder, and a moderate amount of salt. Then a little cayenne and pepper. If you have cumin, then add about 1 tsp. If you have a beer, add 1 can/bottle of beer... preferrably a darker beer.

Simmer 2-3 hours. Add your beans without the juices. If you can, go buy a can of chili beans too.

Use all of that but sneak up on your HOT ingredients..
..I'd lose the Cayenne Pepper..that stuff can be super HOT--try it later down the road..
You can also leave out the garlic..it will just get lost in all that other stuff..
You might try 2-tablespoons of molasses..
You can double up on the tomato paste--use it with some water..cook it on the side--add some red wine and the jalopena's..build your HOT-spice in that..
Drain some sliced stewed tomato--adding that last of all...you add the liguid should you like it more loose.

Sound HOT I'd make it with less Peppers and more Meat Like Sausages and Steak with some onions and tomatoes and garlic.
