DO you have a good turkey breast cutlet recipe?!

Question: DO you have a good turkey breast cutlet recipe?
I normally just throw them in the crock pot with a little chicken broth and mushrooms... but I'm in the mood for something different.

How do you make them? Thanks!

Dear Mom,

Beat an egg white well with a little water to thin if needed. Mix together 1 C flour, 1 tsp salt and as much pepper as you like, then tip the mixture out onto a plate. Dip the cutlets in the egg, coating both sides. Then coat with the flour mix. Melt a couple of tablespoons of butter in a fry pan, add a T of cooking oil to help keep the butter from burning. Fry the cutlets keeping the heat fairly low. You should get a lovely golden coating on the outside, and the inside should be done but not overcooked. And if the cutlets were cut across the grain of the meat, they will be tender enough to cut with a fork.
Salt, pepper and butter. It's amazing how good they can make things taste!
