I made a raspberry frosting on Sunday. It goes really well with chocolate cake. Just used thawed raspberries with butter and confectioners sugar. I used about 1/3 cup softened butter beaten into about a pound of the powdered sugar, then added the raspberries until it was the bright pink color I wanted. I'd guess I used about 3/4 cup of the raspberries. Then I wanted the frosting a little thinner to spread, so I added about a tablespoon of milk. The family loved it!
Chocolate ganache glaze and fresh raspberries. To make a basic ganache, put 4 ounces of semisweet chocolate in a bowl. Bring 1/4 cup plus 2 Tbsp of heavy cream to a boil and immediately pour over the chocolate. Stir until the chocolate completely melts. Spread over the cake. Top the cake with fresh raspberries.
Try this:
Combine Cool Whip, 1 small pack of Jell-O instant chocolate pudding (don't prepare the pudding, just use the powder) and about 1/2 to 3/4 cup of semisweet chocolate morsels. I do a similar frosting for a hawaiian delight cake and it rocks.
Make a chocolate ganache icing. It is a mixture of chocolate and heavy cream that creates a truffle like covering for a cake.
8 oz cream cheese - i stick butter - 2 cups (maybe 3) of confectioners sugar. Mix well and you have the frosting used for a red velvet cake and it's THE BEST.
