Which blueberry muffin recipe seems better?!
Ingredients
1 stick butter {slightly melted, about 30 - 45 seconds, soft enough for you to whisk by hand}
1 cup sugar
1 vanilla bean, seeds only (Which, I'm thinking, can be replaced with vanilla essence)
2 eggs
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk {i've been using 1%}
2 cups fresh blueberries, rinsed and stems removed
2 tablespoons flour

Answers:
The first recipe may give you a richer tasting muffin, there is more sugar to flour ratio.
The second one uses lemon to help enhance the flavor of the blueberries.
The first recipe, if I am correct in just looking at the ingredient, has you dusting the blueberries with a bit of flour before adding them to the batter. You should do this no matter what recipe you decide to pick. Just reserve about 2-3 Tb of the flour and add the flour to the blueberries so they are dusted with the flour. This will help prevent them from sinking to the bottom during baking.
Since the recipes are so similar with the main differences in the quantity of sugar and the lemon zest, I would pick the first recipe and also use the lemon zest.
Enjoy your muffins.
By the way I think a streusel topping would go great on the muffins.
