Blueberry muffins not forming a dome?!


Question: Blueberry muffins not forming a dome?
This is the fourth time I'm trying this recipe; and while the muffins tasted okay, they didn't form a dome, they were just kind of flat. The very first time I tried this recipe; the same thing happened, however, the second time I tried this recipe, they rose beautifully. On my third try, I was back to square one. I figured that happened because I melted the butter (instead of softening) and added a little extra butter and also forgot to preheat the oven. BUT I did preheat the oven this time.

The only thing I can think of is that I did, however, add extra blueberries (170 grams instead of 150 grams) and the butter was melted. What am I doing wrong? Could it have been the butter, or the blueberries? Or do I need to preheat more? Or was it all of this?

(Recipe/Directions below)

- 1 1/2 cups* (190g) plain flour
- 1 1/2 eggs, beaten
- 1/2 tbsp baking powder
- 1 cup (225g) caster sugar
- 150g blueberries
- 1/2 cup (125 ml) milk
- 1 tsp vanilla essence/extract
- 65 grams butter, cut to small pieces and melted/softened at room temperature

1. Sift flour, baking powder and sugar together, and mix well.
2. Add in milk, vanilla extract, eggs and butter and stir until just blended (and lumpy). Be careful not to over mix as it will result in a tough texture.
3. Fold in the blueberries into the mixture. Place baking cases in muffin tins. Spoon the mixture into the cases till almost full.
4. Bake for 20 minutes in preheated oven of 200C (400F) or until slightly golden brown. Allow to rest for several minutes before serving.

*Please don't say I forgot the baking powder - because I didn't.

Answers:

Could be that you are over-mixing them, try mixing just enough to blend evenly.
Or you could try baking them at 450 for the first 5 mins and then backing down to the correct temp and keeping an eye on them for done-ness.

The temp seems abit high for muffins. Preheat the oven to 450. When the muffins have been in for a minute turn the over back down to 400 and continue to bake as normal.
