My breasts need perking up. Any suggestions?!
I have tomatoes, potatoes & cheese, (colby jack), too.
Also various spices.
Any suggestions for perking up my breasts, my kids are tired of having 'em the same old way.

When I want something different but don't feel like cooking, I cut chicken in strips and sprinkle with chinese 5 spice. Fry in olive oil. You can leave chicken breasts whole just put between cling film and bash them out til a bit flatter.
Know it sound strange but tastes really good.
My family love this chicken in a french stick with a bit of mayo.
Hope you try it,it's delicious,quick and easy.
Massage them with some Italian vinaigrette, let them marinate overnight or 2 hours.
Slice the potatoes 1/8" thick, layer in baking dish with sliced onions & mushrooms.
Mix cream of mushroom soup with milk & pour over potatoes just to cover.
Sauté the marinated breasts in hot oil, until surfaces are no longer pink.
Place your breasts on top of the potatoes, cover with sliced tomatoes.
Sprinkle with grated cheese, bake at 400F for 1 hour, covered with foil.
Remove foil for the last 10 minutes, until surface is golden.
Season and roast the chicken for about 45 minutes.slice the potatoes..then add 2 tablespoon of butter to a sauce pan and whisk in 2 tablespoons flour..cook for about 2 minutes...Whisk in 2 cups milk and cook until the liquid is slightly thick and coats the back of a spoon, about 4 to 6 minutes....Season with salt and pepper. Remove from the heat. In a mixing bowl, toss the sliced potatoes about 1 1/2 pounds with salt and pepper. Fold in the cream sauce and pour into the prepared pan. Sprinkle the top of the potatoes with 1 cup grated cheese...Place 1 tablespoons butter in a baking dish and add the potato mixture...Preheat oven and place the pan in the oven and bake until golden brown and bubbly, about 8 to 10 minutes or until tender. Remove from the oven and cool for a couple of minutes before serving....

Harry Gams, I am pleased you clarified the matter, there are some that have minds elsewhere. When I use breasts, sometimes I do a slit amd stuff them with ham cheese or bacon with sun dried tomatoes. The other way, as you mention bone in, I also do them caccitori. It's not often I have breasts, only when I section a whole bird, we mainly have thighs.

For quick, sprinkle breasts with paprika, then broil, about 10 min then turn over and 10 on the other, it has been years since I cooked it that way, thanks for the memory.
