Question: Baking Cornbread (gluten free and preferably vegan)- do I need the egg if I'm using arrowroot?
After looking through a few recipes I see what and where I can replacements, but the one egg. What exactly does the egg do? If its to stick it together wouldn't I be ok with the arrowroot?

Think it will still be good if I skip on that?

Nah. You can use milk or even apple sauce!
Lots of people don't like the fat and cholesterol in eggs and replace them in recipes with other things.
Some people have allergies.
If you like that sweet "yankee" cornbread, try the apple sauce. People use it in cakes all the time.
