Im cooking for a Anemic teenage girl
(a) Prepare a 1 course lunch. Indicate a cold dessert
(b) make a cake which can be used as part of her packed lunches during the week.

the egg whites add another dose of protein

For the cake try an applesauce cake. They stay moist longer because of the applesauce. It should hold all week.

Plus You can pretty much make anything anemia friendly. Just replace the flour with soy powder so she can get some protein.

I have an anemic daughter vegetarian daughter. I have to find creative ways to add protein to her diet.



GOOD QUESTION! a yummy 1 course lunch is somthing simple like grilled ham and cheese, its an all time favorite you butter two pieces of bread put butter side down on a skillet cheese( slices work best) and ham in the middle repeat for other side! and for dessert a strawberry blast! 9/8 strawberries, 1/3 sugar,5 ice cubes blend till soupy and ice is gone and add 6 table spoons of vannila extract.and enjoy!
