it won't be easy to get rid of the sweet sherry taste. what made you use it? the ingredients tend to all be on the sweet side naturally. the only way to offset it a bit would be some additional sea salt and a bit of ground cayenne pepper. next time, deglaze with a dry white wine.

carotts, onions and sherry are ALL sweet so going forward, I'd eliminate the sherry and use a dry white wine instead.
Add a pinch of salt.
And a little more spice.
Even a little acid such as a little lemon juice.
