Question: What should I cook for my dinner tonight everybody? I'm a vegetarian..?
And money isn't a problem,i just won a £50 bet! :)

Black bean vegetarian chili :

2 cloves garlic, minced
1 small onion, diced
2 small sweet potatoes, peeled and chopped
2 medium carrots, sliced
1/2 red bell pepper, chopped (optional)
2 tbsp olive oil
1 15 ounce can black beans
1 15 ounce can diced tomatoes or tomato sauce
1/2 cup vegetable broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne (or to taste)
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

-- Sautee onions and garlic in olive oil for a minute or two, then add sweet potatoes, carrots and bell pepper until onions are soft, about 5-6 minutes.
Reduce heat to medium low, and add remaining ingredients, stirring to combine well.
-- Simmer, partially covered and stirring occasionally, for 20-25 minutes, until flavors have mingled and vegetables are cooked.

Root Vegetable Roast :

1 stick (4 ounces) butter, melted
1 1/2 pounds baby potatoes, such as Baby Dutch, or new potatoes, about 1 1/2 to 2 inches in size, halved
2 small turnips, cut in 3/4-inch cubes, or use 1 medium rutabaga
1 cup baby carrots, larger ones halved
3 small cloves garlic, minced
3 green onions, sliced
1 heaping teaspoon dried parsley flakes, or 1 tablespoon fresh chopped
1/4 teaspoon dried leaf thyme, crumbled
1/2 to 1 teaspoon salt, or to taste
1/4 to 1/2 teaspoon freshly ground black pepper

-- Preheat oven to 375°.
In a 2 to 3-quart baking dish, toss vegetables and herbs with the melted butter. Bake for 45 minutes.
-- Uncover and increase heat to 425°. Bake for another 15 to 20 minutes, stirring once, until vegetables are tender and lightly browned.

Broccoli and Tofu in Garlic Sauce :

1 onion, diced
4 cloves garlic, minced
3 tbsp olive oil
approx 2 cups broccoli, chopped
1 block firm or extra firm tofu, pressed
1 1/2 tsp ginger powder
1/4 tsp cayenne pepper
3 tbsp corn starch
1/4 cup soy sauce
1 cup water

-- Cut tofu into 1 inch cubes.
in a large skillet, sautee onions and garlic in olive oil until onions turn clear, about 3-5 minutes.
-- Add the tofu, ginger, cayenne and broccoli to the pan and continue to cook until broccoli is done, another 6-8 minutes.
-- In a separate small bowl, mix together the corn starch, soy sauce and water, then add this mixture to the broccoli and tofu. Cook until sauce thickens, then remove from heat.
-- Serve over rice or whole grains and enjoy!!... :))

Greek Quinoa Salad :

3-4 cups water or vegetable broth
1 1/2 cups quinoa, uncooked
1/4 cup apple cider vinegar (you may use any flavor you prefer)
2 cloves garlic, minced
juice from one lemon
3 tbsp olive oil
1/2 cup kalamata olives, sliced if desired
1/3 cup fresh parsley, chopped
1/3 cup fresh cilantro, chopped
1 red onion, diced
1 cup cherry tomatoes, sliced in half
1/2 cup chopped artichoke hearts (optional)
salt and pepper to taste
1/2 cup crumbled feta cheese

-- In a medium-large saucepan, cook the quinoa in vegetable broth for 15-20 minutes, until tender, stirring occasionally. Allow to cool.
-- In a small bowl, whisk together the vinegar, lemon juice, garlic, and olive oil.
-- Gently toss the quinoa together with the remaining ingredients, except feta.
Pour the olive oil mixture over the quinoa.
-- Add more salt and pepper to taste and gently stir in the feta cheese.

** You may also add any additional vegetables that you like, such as lightly steamed broccoli, snap peas or diced bell pepper.

*** You may also switch pine nuts for hazelnuts (toasted in the toaster oven).... taste blends well!!... ;))

Spiced Vegan Oatmeal Cranberry Cookies :

3/4 cup margarine (or vegan margarine)
1/3 cup sugar
3/4 cup brown sugar
1 tsp vanilla
1/2 cup soy milk
1 cup flour
1/2 tsp baking soda
1/4 tsp ginger powder
1/4 tsp cloves
1/2 tsp cinnamon
1/4 tsp nutmeg
3 cups quick cooking or rolled oatmeal
1 cup dried cranberries

-- Cream together the margarine and sugars until smooth. Add vanilla and soy milk and mix well.
Add flour, baking soda and spices until well mixed, then stir in oats and cranberries.
-- Spoon 1 1/2 inch balls onto an ungreased cookie sheet and bake 10-15 minutes at 350 degrees, or until done.

** May add chopped walnuts or pecans....!!! :))

Low Fat Banana Muffins :

2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 cup canola oil
2/3 cup nonfat milk
1 egg lightly beaten
1 tsp vanilla
2 small ripe bananas, mashed

-- Preheat oven to 350 degrees. Coat a nonstick 12-cup muffin pan with cooking spray or line with paper cups.
-- In a large bowl, stir flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg together. Make a well in the center.

-- In a medium bowl, combine canola oil milk, egg, vanilla.
Add wet ingredient to dry mixture, followed by mashed bananas. Stir with a wooden spoon until just combined.
-- Fill muffins cups two-thirds full. Bake for 18-22 minutes.

** Optional extras to fold into the batter: 1/2 cup raisins, 1/3 cup miniature chocolate chips.

*** May use one more banana for extra flavor!!!... and then just 1/2 cup of sugar.
*** Also, I sprinkled with old fashioned oats and cinnamon for a perfect look. :)))
