Question: All you cooks and chefs what is flap meat used for and is it tender?
I would like to use it for teriyaki but do not know anything about this meat.
How do you cook it so it melts in your mouth?

Answers:

Flap meat, like flank steak, responds well to high, dry heat, whether grilled, broiled, pan-fried or stir-fried. If you have 3 hours, use one of them to marinate the meat in a mixture of soy and Worcestershire sauce, salt and pepper. Then cook it under the broiler being careful not to cook it past medium-rare. Slice it thinly, across the grain and it will taste good with a full rich beef flavor and be reasonably tender.
