All you cooks and chefs what is flap meat used for and is it tender?!
How do you cook it so it melts in your mouth?

Flap meat, like flank steak, responds well to high, dry heat, whether grilled, broiled, pan-fried or stir-fried. If you have 3 hours, use one of them to marinate the meat in a mixture of soy and Worcestershire sauce, salt and pepper. Then cook it under the broiler being careful not to cook it past medium-rare. Slice it thinly, across the grain and it will taste good with a full rich beef flavor and be reasonably tender.
