Question: After cooking, does couscous continue to expand?
I can't eat rice because even though you cook it, it still expands a little bit once it's in your stomach. I'm looking for an alternative and I've been seeing couscous used a lot on the food network lately.

it shouldn't provided it is fully cooked. i use barley frequently to replace rice. i also use bulgar wheat and millet.

as long as any of these are absorbing water, they would be considered undercooked for your purposes. once they stop absorbing, they'd probably be okay for your belly.



Hmmmm. Couscous is just a kind of pasta-like product. Can you eat pasta? I think if you cook it properly, and fluff it with a fork before serving, you will be fine. Try it and see. May I ask why the rice is a problem for you? Have you had surgery? I think I can shed more light if you provide this info.
