Vegetable soup recipe?!
My mum is going shopping in about an hour and im going to make tea in like 2 hours. (I live in england so its like 5 o'clock now) Im only 14 so keep the recipe moderately simple.
Im going to use a chicken stock with water, carots, broccoli, what else would go with it??
Answers:
whatever veg you have you can just chuck in. vegetable soup is good like that. celery, onion, sweetcorn, peas, you can chuck all that stuff in. the blend it real well, and use a strainer to get all the bits out if you're putting peas in it. put cracked black pepper in it before you whiz it up to give it a spicy bite.
Turnips, leeks and onions would go great with your carrot (I don't know about brocoli, I eat them but steamed, not with soups).
Turnips are great, because they look like potatoes, almost taste like potatoes (once cooked) but are not potatoes.
I include potatoes in my soup but I somewhat feel disappointed if I stumble upon a potato piece instead of a turnip piece when eating my soup.
Edit:
Hopefully, you're using homemade chicken stock.
Commercial ones (even organic) taste dreadful, while doing your homemade chicken stock is cheap and easy (lenghtly but still cheap and easy).
i make a really simple healthy soup by frying garlic, chilli and onion in olive oil, then adding the stock and boiling the veggies in it for a bit. it's sort of broth-y, don't know if that's what you're into. lots of spices, basil, oregano, black pepper make it nice.
you can add green beans, lentils or any beans, peppers, cabbage, celery, turnip. whatever :)
good luck
