This recipe is similar to what I would make. There is a good picture.
Skillet Beef Stew
2 Tbsp. cooking oil
2 lb. beef stew meat, cut into 1-inch cubes
2 tsp. dried thyme or oregano, crushed
6 medium carrots, peeled and quartered
4 stalks celery, cut in 2-inch lengths
2 medium onions, cut in 1/2-inch slices
6 cups lower-sodium beef broth
1/3 cup all-purpose flour
1 recipe Potato Mashers
1. In 12-inch skillet brown beef in hot oil over medium-high heat with thyme and
1.4 teaspoon each salt and pepper. Remove, set aside. Add carrots, celery, and onions to skillet, cook and stir 5 minutes. Return beef to skillet. In bowl whisk together broth and flour; add to skillet. Bring to boiling; reduce heat. Simmer, covered, 45 minutes. Uncover; simmer 10 minutes or until meat is tender. Serve with potatoes. Makes 8 servings.
2. Potato Mashers: In microwave-safe bowl, microcook 8 Yukon gold potatoes (23.4 lb.), half at a time, on high (100 percent power) 8 minutes, covering bowl with vented microwave-safe plastic wrap. Mash potatoes with 1 cup milk, 1.2 teaspoon salt, and 1.2 teaspoon black pepper.

This could be made early and instead of serving it out on a plate, I would reheat in decent sized bowls or small casserole bowls with the mashed potatoes covering the stew.(like a Shepherd's Pie, or a Hot Pot) You could use what ever veggies you want to.
It's a great way to eat and watch TV at the same time, just make sure you have serviettes at hand.

* 1 (6 pound) whole roasting chicken
* 1/2 cup honey
* 1 tablespoon chili powder
* 1 1/2 teaspoons ground cumin
* 1/2 teaspoon cayenne pepper
* 1 teaspoon salt
* 1 teaspoon garlic powder
* 2 tablespoons butter, melted
Directions
1. Preheat oven to 400 degrees F (200 degrees C). Rinse and pat dry the chicken; place in roasting pan.
2. In a bowl, mix together the honey, chili powder, cumin, cayenne pepper, salt, and garlic powder. Using your hands, rub the honey mixture all over the chicken. Baste chicken with the melted butter.
3. Roast the chicken in the preheated oven until the skin begins to brown, 30 to 45 minutes. Baste the chicken with juices in the roasting pan.
4. Reduce heat to 350 degrees F (175 degrees C), and roast until no longer pink at the bone and the juices run clear, about 1 1/2 to 2 hours. Baste occasionally during roasting. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (80 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.
How about simple soup and sandwiches. You could do something like a turkey and tomato basil.
