Any suggestions for an alternative sauce for this meal?!


Question: Any suggestions for an alternative sauce for this meal?
I am making chicken parm for dinner tonight for my Boyfriend, however I don't like tomato sauce, I was thinking I could make some kind of sauce with olive oil and garlic instead for me, just need some direction, as I have never really made it before? Thanks!

It won't be chicken parm in the traditional sense but a lovely white sauce would be beautiful.
For the white sauce, bring the 2 cups of milk to a simmer in a saucepan. Set aside. Melt 8 tablespoons (1 stick) of the butter in a large saucepan. Add 1/2 cup all-purpose flour
and cook for 1 minute over low heat, stirring constantly with a wooden spoon. Pour the hot milk into the butter-flour mixture all at once. Add 1 tablespoon salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon ground nutmeg, and cook over medium-low heat, stirring first with the wooden spoon and then with a whisk, for 3 to 5 minutes, until thick. Set aside off the heat.

To assemble spread some of the sauce in the bottom of an 8 by 12 by 2-inch baking dish. Arrange chicken on top, then more sauce, then you could add some sauteed mushrooms, and 1/4 cup grated Parmesan. Top with sauce, and sprinkle more Parmesan.
Bake for 45 minutes, or until the top is browned the sauce is bubbly and hot. Allow to sit at room temperature for 15 minutes and serve hot.

Olive Oil and Garlic Sauce

Ingredients:

1/2 cup extra-virgin olive oil
6 large garlic cloves, peeled
Salt
Ground black pepper
1/4 cup minced fresh parsley leaves

1 – Place oil, garlic, and 1 1/2 tsp salt in small skillet. Turn heat to medium-low and cook, stirring often, until garlic becomes a rich, golden color, about 5 minutes. Do not let garlic brown.

2 – Remove skillet from heat. Stir in parsley, and pepper to taste. Reserve 1/4 cup pasta cooking water and use as needed to moisten sauce.

Season, flour and pan-fry the breast ... pull when the breast is almost cooked and put the parmesan cheese on top and put it under the broiler to brown (if you are also going to use mozzarella besides the parmesan I'd cut the breast to make a pocket and put it inside ... but *even better* would be a different softer cheese inside such as Brie or another from that section of the supermarket) ... put the chicken breast on a bed of buttered linguini ... then, over the top for the sauce use classic Hollandaise ...

Is it the tomato you dont like? My brother never liked tomato sauce so i would add cream, mozz, & parm cheese to my tomato sauce & he loved it.
