Answers:

Your recipes are wrong

Your oven 1) Isn't calibrated 2) Didn't heat for 30 minutes AFTER it came to temperature

Your ingredients aren't 1) Fresh 2) Measured correctly 3) At room temperature

Your dough is overworked

Your cookies aren't 1) Uniform in size 2) Spaced properly on the baking sheet

It's raining

You're not turning your pans front to back (and top to bottom if baking two sheets at once)

Your pans 1) Are dark 2) Aren't lined with parchment or a silicone mat 3) Aren't the right size

There are a jillion reasons cookie recipes don't work. Cakes are easier to make. It's easy to make a mediocre cookie, but it's very challenging to make the perfect cookie.

Baker for over 25 years

The problem is probably your oven, if you've experimented with different recipes. Perhaps your oven is old or for some reason it doesn't heat at the same rate as a standard oven. It sounds like your oven's temperature runs higher than it is supposed to, leading to uneven cooking. Try turning the temperature down fifty degrees and cooking your cookies 5 minutes longer.

Do NOT open the oven while you're baking your cookies. It will interfere with the cooking time/temperature.

1. you are using too much dough to try to make the cookie
2. mash them with spoon or fork or bottom of glass so they are flatter
3. be very careful with your measurements
4. baking too long at too high a temperature makes for scorched bottoms
5. is your cookie sheet nice and shiney? burn some fat on it so it is dulled. will bake more evenly.
6. get an oven thermometer to check the temperatures in your oven
7. bake a few minutes less than called for then check if cookies are browning gently on edges.
