question about making soup?!
8 medium/large carrots
2 TBS corn starch (to thicken
1 cup milk/cream
1 bunch chopped thyme
1 TBSP oil
now the question is, how much water should i add to this to give it an even consitancy??? i dont want my soup SUPER thick, and i dont want it to taste like water.
how much water should i add? maybe 1 litere?

I would use about a litre of good vegetable stock and then use the corn starch after. If it isn't thick enough, you can always add more corn starch.
Edit: ooh, and lots of freshly ground black pepper (if you like pepper).
If not (or as well as ) coriander.
Hmm.... why add cornstarch? when you can blend the soup to make a puree.
I would use a broth as a base plus add some onions and celery (a basic mirepoix), plus parley and a clove of garlic.
I guess the question is what flavors do you have in your mind.
About 1 liter should be good... but i don't always add water i add beef broth (stock)
So, i would add 1 liter beef stock :)
Plus, for taste i'd add onions, or maybe as a side dish i would make a steak.
You can always add more.
Try to use a stock, chicken or vegetable.
Saute some onions.
Add a tbsp or two of fresh ground ginger
Leave out the corn starch
I don't put water in soup. If it needs thinning I use chicken or beef broth.
I have a basic technique for soup making that works well for any type of soup. It goes like this:
Cook some bacon (if using), add some oil to the pan, saute some onions, then add your water, the amount of water or chicken broth depends on how much soup you are making. Add a bay leave, add the herbs, add the chopped up vegetables, carrots, celery etc. Bring it to a boil. Let it cook until vegetables turn soft. Add the cream (milk), add cubed potatoes. I use flour to thicken the soup, you could use cornflour if you choose to, dissolve the cornflour in some liquid, add gradually, you don't need very much,.the soup will thicken when the cornflour is cooked, it takes a while, maybe 2-3 minutes, so don't add too much at a time. You can also thicken your soup with instant potato. Adjust salt and pepper to taste., Other tips: add some dried onion powder and garlic powder and a tiny bit of Cayenne pepper will flavor up your soup really well. And, if you don't have chicken broth, try add a small cube of chicken bouillon.
