Question: Can someone tell me how long I should cook my 4.45 lb Chuck Roast?
I have an idea of what I'm going to do with the roast as far as flavor, but I would like for you all to share your recipe ideas as well.

Thank you for you time.

Stuff with garlic, salt, pepper n paprika n flour the outside, brown all sides. Set the meat aside, brown 2 T of flour in the pot with oil, add some chopped onion till soft, add 1 can of cream of mushroom soup(do not add water to it) and 1/4 pk of lipton onion soup mix, stir well put the meat back in and coat it with the mixture. Slice 1 large onion, put 3/4 of the slices under the roast and the rest on top. Cover tightly with foil cook 325 for 3 hours. That should do it!!!

In a large skillet heat your oil on medium heat. Then sear the raost on both sides while preheating your oven to 350. You are only browning the meat on the stove. Then put it in a large shallow pan or leave it in the skillet if is oven safe or sear it a large dutch oven if you have one so you do not have to change pans. Roast for 45 minuts and then add your veggies like onions, carrots, celery and potatoes if you want a meal all in one pan. Ad salt and pepper at the very end and garlic if you like this flavor. Add a 1/2 cup of water with the veggies to make a nice gravy sauce.

It is crucial that you allow the roast to come to room temperature to ensure even-cooking. This means leaving it out for up to two full hours right before roasting.

Preheat your oven to 450 degrees.

Use a paper towel to pat the roast dry.

Rub butter on the cut ends of the roast.

Create a seasoning rub or paste with ingredients such as pepper, coarse salt, garlic powder, and onion powder. Make a series of ? inch deep slits all over the top of the roast as well as the sides. Rub your seasonings all over the roast, covering all exposed meat.

Place the roast in a heavy metal roasting pan, bone-side down.

No matter what size roast you have, you will start it in a pre-heated 450 degree oven for 15 minutes then reduce the temperature to 325 degrees for the balance of cooking time. Cooking times will vary depending on size of the roast and desired level of doneness.
1 1/2 to 2 hours should be right...

Happy cooking...........

20 minutes per pound at 350, check with a meat thermometer. I like any good dry rub.
