Why not make your pancake batter tonight, refrigerate it, and then cook the pancakes tomorrow morning.
The fresh pancakes will taste better than the frozen, thawed and reheated pancakes. And won't take much longer.

You can always store pancakes in a plastic tupperware, or even a ziplock plastic baggie.

You can also buy pre-cooked frozen pancakes, and then microwave or use in toaster. They're not as good as just-made, but they're okay in a hurry.

go up to the step where you put them in the pan, the pop them in the fridge overnight. Take them out 20 mins before you want to bake them in the morning.
