Recipes to make for a family of 3?!


Question: Recipes to make for a family of 3?
I always cook except for the weekends and i need some new recipes. I am beginning to make a pattern of meatloaf and mash potatoes... soo i really need some new recipes. Anything would be nice, i preferably want main dishes and a desert to to go with that dish. Thanks :)

Answers:

Why don't you try vegetarian a couple of times a week.

You could toss pasta a jar of Alfredo sauce and microwaved frozen broccoli, or toss it with garlic, olive oil, basil, tomatoes and parmesan cheese. (I make a great pasta with olive oil, peas, tomatoes and balsamic vinegar).

You could make make bean burritos with a can of refried beans, sauteed peppers and onions, cheese and sour cream. You could make a veggie taco salad with red kidney beans, avocado, corn, salsa, cheese, sour cream and lettuce, crunch up some tortilla chips into it.

You could make make macaroni and cheese with peas mixed in or with a salad on the side

You could make a big frittata (it's easy just mix eggs and milk together put it in a hot skillet with a little butter, add whatever veggies and cheese you want, and cook it for a few minutes, then put the pan in the oven until it finishes cooking)

My FAVORITE easy meal is roasted veggies, just cut a bunch of potatoes into wedges, toss with olive oil, salt, pepper and a bag of frozen California mix (broccoli, cauliflower and carrots),
bake at 400 for 45 minutes or until the potatoes are cooked all the way through. It's like a veggie hash, you could serve a fried egg and some cheese on top for more protein.

It's a great and healthy way to introduce more interesting foods to your family.

Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
