Replacing sugar with honey in a recipe?!


Question: Replacing sugar with honey in a recipe?
I've read that an alternative to sugar is honey, but i'm guessing it would change the consistency.

I'm making cupcakes using a recipe from 'Vegan Cup cakes Take Over the World'. I'm not vegan and they're not for vegans, so I have no problem ethically or whatever using honey.

it calls for 3/4 cups of granulated sugar. How much honey would I use if I didn't want to change the consistency to much?

oh, and I'm using the vegan recipe because I love how they normally taste...

Use 2 1/2 tablespoons of honey and lower your oven heat 25 degrees and if you're adding any liquid such as water, reduce that by a couple tbsps and you should be good:)



9 teaspoons of honey is the equivalent to 3/4 cups of sugar. You will want to cut back any liquids you are using in the recipe by 2 teaspoons, as honey is 1/4 water and will be adding more moisture to your cup cakes.

You'd probably want use about 2/3 cup of honey to replace 3/4 cup of sugar. And you'd need to reduce the liquid addition slightly. See site below for more thorough information.
