Question: Creamy Garlic Mushrooms Recipe Please!!?
I recently visited the Oxfordshire Greyhound race track to have a meal there for my friend's birthday and for a starter I had creamy garlic mushrooms with bacon lardons. It was VERY tasty and I'd like to make it for my boyfriend's birthday. However, from looking online at different receipes, they're all so different! Some say to use double cream, some say single cream, some use veg stock, some don't and then one used cream cheese! I'm in a mushroomy confusion! Are there any recipes people have personally tried and know are very good?

Hi Eloise,

Here's the recipe for you.
* 250g bacon lardons
* 4-6 tbs mascarpone cheese
* 1/4 cup heavy cream
* 3 finely chopped/minced garlic
* 1/4 tsp or less, freshly grated nutmeg
* Sea salt and freshly ground black pepper to taste
* 1 tsp chili flakes
* 1 tsp onion powder
* Desired mushrooms: Small portabello seem to be the tastiest to me!
* Parmesano/Regiano add as much as you like to achieve the texture you desire.
In a saucepan brown the bacon lardons until they've seared (browned) now you have the liquid fat, so now add mascarpone cheese and heavy cream. Stir on on low heat. Add the rest of ingredients, while it's still simmering, add your portabello (small creminies) and let simmer a few more minutes.
