My guess is the same person is being stuck with all of the cooking? Perhaps your mom? Why don't you find some recipes that you can make or ones similar but different enough to suggest to the cook? If chicken is normally on the menu, odds are she/he is trying to make healthy meals and chicken has been the traditional meat for that.
Try sharing some different chicken recipes, with spices.
Fish recipes-also healthy a couple times a week and certain not to be confused with chicken.
Vegetarian meals with beans or mushrooms for a 'meaty' taste, without the fats.
The 'other white meat', but brined-gives tenderness, like pork of old, less fat but more sodium.
Stir fry beef recipes, using very lean cuts of meat. Lots of veggies and not a huge jump in fats.
Either they are in a rut, or this is all they know how to prepare. This would be an opportunity for you to take the reigns and cook for them. Find yourself some recipes (and you don't have to go overboard to be good, just go with what you'd like to eat, but isn't being prepared for you) and tell whoever buys the groceries what you need and tell them it's your night to cook. Make it something you know you can cook and have fun with it. If they want to join in the preparation, let them. Who knows, this might inspire your family to have fun with food like you did.
Some people eat only to feed their bodies the food it requires to stay healthy. Eating for pleasure is a whole different thing. I like a variety of foods but mostly for the nutrients in them. I never eat out and meal time is not a social event for me. I have a lot of other interests, eating is not one of them. Perhaps this is the case with your parents. I don't think it is unnatural.
If this is something which really concerns you, I would check on different herbs and spices and make your own seasonings and sauces.
I started taking cooking classes. That really expanded the dishes made. There are lots of ways to cook chicken.
