Question: What dishes/recipes would be great for lazy Saturday night meal?
Slow cooker ideas would be great - something I can get going earlier in the day and forget about it.

Crock Pot Beef Stroganoff Recipe
Ingredients:
?3 cans of mushroom soup (undiluted) *You can use 98% fat free
?1 cup sour cream
?1/2 cup of water
?1 package dry onion soup mix (1 oz)
?2 pounds of beef stew meat
Directions:
Combine all ingredients and stir until well coated. Cover and cook on low for 6 hours or on high for 3.
Serve over cooked rice or egg noodles.
This is an excellent easy beef stroganoff slow cooker recipe.Enjoy!

Beef and tomato casserole (slow cooker)

1kg of diced beef
1 x Cans of diced tomatoes (with italian herb, I use)
1 x Cup of beef consome
1 x Leek
2 x Garlic cloves crushed (I use 4 because I love garlic!)
2 x Tablespoons of tomato paste
Any other vegetables you might want to add - I use carrots and potatoes
A splash of red wine

Lightly coat your beef pieces in seasoned flour and brown in a pan before transferring to your slow cooker. Add crushed garlic and leeks to the pan and saute until leeks are soft. Add diced tomatoes, consomme and tomato paste stirring. Add a splash of wine and simmer gently for 5 minutes.
Pour mixture over the beef in the slow cooker and add your vegetables. Cook on low for approximately 6 hours.

Meat comes out very tender in a beautiful rich tomato sauce, I served with fresh crusty buttered bread.

"Guiness Beef Stew"

I had this in London years ago and have been making it ever since. It's great with hearty bread & fresh cream butter & a pint of Guiness stout.

Basically all you do is make your favorite traditional beef stew consisting of: cubes of stewing beef, veg. oil, peas, carrots, onions, celery, potatoes, beef broth, garlic, salt & pepper. You brown your beef & onion wedges in veg. oil and place it in your stockpot/crockpot. Add in your wedges of carrots, celery & little cream potatoes. Add in your beef broth, 1 C. of Guiness stout, garlic & seasoning. Let it cook through until the beef is tender. Just before serving, stir in 1/4 stick of butter. It is a great emulsifier and adds to the flavors. Serve up with the bread & a little glass of Guiness stout. NOTE: If you don't drink alcohol, you can add it to the stew and all of the alcohol will evaporate in the cooking process entirely. It will just add to the flavor. However, you can drink whatever you want with this meal. Enjoy.

Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4

Ingredients 3 chicken breasts, boneless, skinless
2 (10 ounce) cans cream of chicken soup
1 (16 ounce) bag frozen mixed vegetables
salt & pepper
(optional)



Instructions 1 In a c rockpot place fozen chicken, vegetables and soup mix. Cook on LOW 8 hours or HIGH approx 4 hours. When done, shred chicken with 2 forks. Season with salt and pepper.
2 Serve over buttered white rice.
3 Top with cheddar cheese if desired before serving.
