Question: Help me make a huge delicious healthy salad?
What a good recipe? And a sauce/dressing recipe too? I really hate vinegar- I love thousand island but it's too fatty-
help me make a nutritious colorful salad and sauce please!
I am required to use 1 whole chicken breast and some black or kidney beans

Answers:

Make a Southwestern Black Bean, Pepper, and Corn salad!

Estimate all the amounts to what you like....
-black beans, rinsed and drained
-corn (if fresh, grill first for maximum flavor, and of frozen, keep frozen to add texture and keep the salad cool)
-diced green and red bell pepper
-chopped avocado
-minced red onion
-chopped cilantro

For dressing, make a light vinagerrette using olive oil and lime juice

Combine all ingredients and refridgerate for at least 10 minutes before serving

Add chopped chicken or serve on the side to make it a full meal

Super healthy, fast, and makes great leftovers!! Best salad ever!!



ALWAYS!! serve an excellent dressing that you really like on the side!!! Put it in a small sauce dish.

But!! What all do you use vegetable oil or olive oil on? The dieticians tell me to saturate my bread in olive oil instead of having a little bit of butter on it. ICK ICK ICK!!! Ain't about to do that!!

All salad dressings have a LITTLE vegetable oil in them!!

My granddaughter loves Vinegarette dressings!! I use about half of one of her dressings in the same amount of Mayonnaise for a creamy vinegarette.

Icky black and or kidney beans!!!

green or purple seedless grapes
One package of baby spinach leaves
2 very thinly sliced ccucumbers
2 bunches radishes thinly sliced
green tops of 2 to 4 bunches onions, sliced thinly
red onion slivered
diced chicken
black beans
diced camembert?

Raspberry Hazelnut Vinegarette blended into Mayonnaise served on the side.

Healthy is in the mind of the beholder. Healthy is proper portions of foods, not the foods themselves as everything is a healthy food.
