The earlier answer about the higher gluten is correct. You can use the bread flour BUT the bread will be "airier" and not as dense as banana bread usually is. What you might want to do is cut back on 1 egg yolk, and add 1/2 a banana more to compensate.
The loss of the yolk will cause the extra gluten in the flour to do the binding and the addition of the banana will compensate for the loss of moisture from the yolk and add a little more density to the bread.
