Question: What should be the texture of a baked meringue shell?
should they be 100% crisp or crisp outside and softer inside? I have never tasted one so i do not know when they are done. My frist batch turned out super crisp.

The exterior should be crisp and the interior should be soft



They should be egg white and sugar, crispy and dry all the way through.

I like the "forgotten cookie" method of baking these. Put in oven at the temperature stated, turn off oven, then ignore for 12 hours. Not opening oven at all until the 12 hours is up.

Yes, they taste mostly like sugar crisp. Then you can put custards or fruits in the shells. Yes, they will melt after a period of time, so should only be filled immediately prior to serving.



It should be slightly brown and crisp on the outside of shell but, soft on the inside.

Crisp and crumbly outside and moist inside.
