You are on the right track. Make your own mayo.

egg yolk, at room temperature
Pinch salt
1/2 teaspoon Dijon mustard
1 teaspoon vinegar
About 1 cup/250 ml grape-seed oil (or vegetable, canola, or peanut)
Lemon juice, to taste
Pinch white pepper
Whisk together the egg yolk, salt, mustard, and vinegar in a roomy bowl.
To add the oil, start whisking the yolk mixture and let the oil fall from the spout, drop by drop, until you have achieved a thick, velvety mayonnaise.
Taste it.
Add lemon juice, salt, and pepper to taste.



I probably wouldn't add canola oil to my tuna, but have you considered olive oil, capers, and chopped red onions? The dijon mustard, olive oil, and capers (along with a little lemon juice) will make a great dressing for the tuna. Add some kalamata olives and crumbled feta and you have a greek tuna delight!



have any sour cream?no? yogurt?no?.....beat an egg in the blender and slowly add the canola oil to it til it emulsifies and poof ...now you have mayo(you might want to add a tsp lemon juice and a few grains of cayenne to it first -but that's about all mayonnaise is -eggs acid and oil good luck

As a Sub for mayo NO it is not a good sub.

As a different option it is okay. There are people who don't like mayo/miracle whip. So they use a little oilive oil, lemon juice and other stuff. But if you have the tuna packed in oil no need to add more. Just drain the excess off.
