Not a good idea !
unless you like rubbing it in!



Ask them. If you know them well enough to know they are a recovering alcoholic and well enough to invite them to dinner then you should be able to ask if cooking with alcohol is ok for them.
I would use a broth in place of the sherry.
Most of the alcohol evaporates out but not all.



That is all the same amount of residual alcohol as is in a couple teaspoons of vanilla extract in the desserts!! It is negligible.

However, I do know some alcoholics who get even toothpaste and mouthwash that doesn't contain any alcohol.

Ask your friend if it is ok or not.



If they are trying to recover and taste the sherry, it could still trigger a reaction of them wanting the alcohol even though the alcohol would be gone.



Yes, during cooking the alcohol burns off and the fruity tones are left to provide flavour
