What is the ideal temperature for smoking food?!


Question: What is the ideal temperature for smoking food?
I have just got a Hot Food Smoker and the results are a little disappointing so far.
What temperature should I cook meat ,poultry and fish at?
Do I smoke at a low temp. for a long time or a hot temp for a short time?
Has anyone had any experience of this?

Answers:

Maintain temperature range between 225° and 250°. The amount of time will depend on the size of the protein(s) you are cooking, but temperature is more important anyway. If you're smoking pork, you'll want an instant read thermometer registers between 165° and 170°



I dunno put the food into some Rizla, role it up and light it. Don't see why you'd want to smoke food anyway.

I've seen chavs rolling their crappy little Rizla and smoking it.



Between 190f and 220f



There isn't one - you're supposed to eat food, not smoke it.
