Question: What are some things I can add to plain pasta to make it taste better?
I want something quick and easy, preferably with cheese and no tomatoes.

cheese sauce:

4 tbsp butter (1/2 stick..)
4 tbsp flour (1/4 cup, idk about weight w/e don't care I just use a spoon)

melt butter and then add the flour, cook for 1 minute

slowly whisk in 4-5 cups of milk and bring to a simmer. Stir frequently. Add in a good handful parmesean cheese, or whatever cheese you like really. I use cheddar and parm mix. Add salt and pepper, a bit of nutmeg w/e you like. Basil, oregano, garlic, onion powder... just taste it and see what you like

aaaaaaah, pasta, my favourite dinner.
There is so much you can add to it. I use penne (tubes) pasta. When cooked, rinse with boiling water, put back in the saucepan with some butter and stir so it's covered. Then I add lots of grated cheese, sprinkle with garlic powder - black pepper. You can also boil the pasta with celery leaves (take them out after cooking)
Instead of butter I open a flat tin of mackeral in oil fillets and stir that in, cheese on top and grill until cheese melts. You can add a tin of red kidney beans or cooked baby broad beans.
Just use your imagination - every one will love it.



Pasta carbonera
*Optional* Fry bacon or ham until it's crispy and break it into small pieces. Remove from heat.
If not using bacon melt some butter and/or olive oil.
Boil pasta (while the bacon cooks) and drain.
Stir the noodles into the bacon or melted butter and then, with the pan off the heat, add beaten eggs and stir quickly. It's important that the pan isn't on the heat at this point or you'll end up with scrambled eggs.
Once the egg has formed a creamy sauce stir in grated cheese and stir until the cheese melts.

This is one of the easiest and fastest meals but so delicious.



Pesto from a jar or home made.

Ingredients

1/4 cup walnuts
1/4 cup pignolis (pine nuts)
3 tablespoons chopped garlic (9 cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan

Directions
Place the walnuts, pignolis, and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

Notes: Air is the enemy of pesto. For freezing, pack it in containers with a film of oil or plastic wrap directly on top with the air pressed out.

To clean basil, remove the leaves, swirl them in a bowl of water, and then spin them very dry in a salad spinner. Store them in a closed plastic bag with a slightly damp paper towel. As long as the leaves are dry they will stay green for several days

My favourite quick non- tomato sauces are-

1. Chopped fried smoked bacon and mushroom, with creme fraiche or cream and a little grated fresh nutmeg
2. Finely chopped red chilli, garlic, fresh parsley and walnuts- just mix with hot cooked spaghetti or tagliatteli with a little olive oil.
3. Meatballs- using minced beef, chicken or pork, serve with spaghetti tossed with olive oil, creme fraiche, parmesan or pesto.
4. Boil greens such as broccoli, spinach etc, or chopped rocket, mix with olive oil, garlic, parmesan, or creme fraiche and stir in



Sautee a little fresh minced garlic in olive oil. Medium low leat and be careful not to let it brown. Add a pinch of red pepper flakes (optional). Toss your pasta in the pan, then serve with grated Parmesan cheese. Yum!!

You can add some butter to the olive oil as well, but I wouldn't do 100% butter.



Melt 2 cups of butter add 2 cloves of chopped fresh garlic, 1/2 cup of chopped parsley and 1/2 cup of Parmesan cheese. Pour mixture over any pasta. OMG it is easy and delicious.



I don't eat tomato either we usually add olive oil and basil to it or squash and zucchini that has been fried on the stove. You might also try adding pieces of chicken to it and topping it with cheese.



-You could quickly make a white sauce with butter, flour and milk and add cheese for flavour.

-Tomato sauce/puree

I like to put grated cheese in a creamy sauce & I find if you mix in Philadelphia with crispy bits of bacon it's a really delight



Chilli flakes,flavours anything.
