Question: I'm in search for the way to make the best fried chicken ever!?
How do I achieve that crisp and that color that makes it look so yummy?! should I dry the chicken of extra water? should I put more oil? or less oil? if I put more it "jumps" all over, if I don't it looks sort of grayish! should I get another kind of pan? and if I put a top on the pan it cooks it but looks awful in the outside, help!!!!!!!!!!!!!

I deep fry chicken in a deep pot of peanut oil with a thermometer set in there to maintain a 350-375 degree temperature. the secret is to not cover the pan. that steam-fries the chicken, resulting in the breading falling off and the chicken tasting blah. I marinate my bone-in chicken pieces in 2 c buttermilk mixed with 1 tsp salt, 1/4 tsp pepper, and 1 tbsp Frank's hot sauce in a ziploc bag for a few hours in the fridge, then add 3-4 tbsp of the buttermilk to my flour mixture (well-seasoned 3 c flour + 1 1/2 tsp baking powder) to make it crumbly. This results in extra crunchy coating. Then deep fry those babies! hope this helps. you want to fully submerge your pieces, i.e. deep fry, as opposed to shallow-fry (or pan-fry). KFC uses a pressure fryer, but those things cost a fortune!
