How do you use canned Wild Salmon?!

My Mum's Salmon Loaf...down memory lane: 1 tin of red salmon, 1/2 cup soft breadcrumbs, 2 tbsp finely minced onion, 1 tbsp lemon juice, 2 eggs [separated], 2 tbsp melted butter, salt & pepper. Method: squish salmon in bowl, combining any soft bony bits and dark fatty bits [all are good & tasty, do not discard!]. Add breadcrumbs, the 2 egg yolks [save whites], onion, lemon juice and melted butter. Stir thoroughly--then fold in stiffly beaten egg whites. Place mixture in loaf tin and bake for 25-30 minutes in 350F oven. Loaf will puff up and get brown on top. Serve in thick slices with a plain cream sauce [add in some green peas or chopped hardboiled eggs to sauce] and a sprinkle of fresh parsley bits.
My mother made this for her ladies bridge lunches or when we couldn't afford regular meat - a tin of salmon in her young married days was a ton cheaper than most other main dish ingredients.
One thing I love is to substitute canned salmon for canned tuna in a tuna casserole. (I've been meaning to make this again; it was great last time I made it.) You can web search (Google, Bing, Yahoo, etc.) for "tuna casserole" and choose any recipe that looks good. It also works as a tuna substitute in things like tuna salad sandwiches.
Follow-up: One great thing about substituting canned salmon for canned tuna is that wild salmon is considered very safe in terms of mercury hazard, while tuna is on the list of fish that one should eat in moderation.
I use it to make salmon cakes. I mix it with bread crumbs, an egg, chopped green onion, lemon juice, and old bay seasoning, form into patties, and fry in a pan with maybe 3 TBSP hot oil, probably 3 or 4 minutes per side. Then serve with lemon wedges and remaloude sauce or tartar sauce. Oh, I'm sorry, besides salmon patties? My husband makes a salmon dip appetizer, with canned salmon, cream cheese, capers, lemon juice and spices. It's a really yummy appetizer. Google for complete recipe.
I add chopped celery and mayonnaise and dash of liquid smoke and use in wraps and salads or use from tin to make salmon a la king , patties or a loaf Great too in casseroles or as an addition to mac and cheese along with peas or added to simple Kraft Dinner
My mother used it to make salmon loaf. I never got her recipe but there are tons online. All I can remember is a can of salmon, onion, celery, breadcrumbs, and a can of cream of something soup, maybe something else. Bake as you would a meatloaf.

Good Mixture:
- Canned Salmon
- Sun-Dried Tomatoes packed in Olive Oil (not too many)
- Capers
- Diced Olives
- Diced Hard Boiled Eggs
- Chopped up Green Beans
- Pepper, Thyme, Oregano & Salt
I make a white sauce add salmon and peas and serve over cut up slightly mashed potatoes
