oily taste mayonaise?!

I made homemade mayonnaise but it has a really oily taste, can I fix this problem, please?

Well, I would have to ask you how you made it and what did you make it with. The oil you use can also make a big difference in how it all comes out. Some people make mayo with just oil and an egg, and well that is plain, bland and can taste oily. Here is what I use to make mayo.

1 egg yolk*
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 pinches sugar
2 teaspoons fresh squeezed lemon juice (fresh please, concentrate does not taste good at all. Lime juice works well to.)
1 tablespoon white wine vinegar
1 cup oil, safflower (safflower has little to no taste at all. you can use canola or EVOO as well)

If you like spicey stuff, you can get a small can of chipotle in adobe sauce, puree a pepper or two with some of the sauce to a fine saucy consistancy then mix it into your mayo giving you a chipotle mayo that really rocks! (great on sandwhichs, burgers and sweet-potato fries! )



It depends on your ingredients. You may used too much oil. Try this Alton Brown recipe:
1 egg yolk*
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 pinches sugar
2 teaspoons fresh squeezed lemon juice
1 tablespoon white wine vinegar
1 cup oil, safflower or corn



Your mayo could taste oily because of the type of oil or becase it is not emulsified completely. You can try adding a bit of dijon mustard which may help you out on the taste instead of whipping up a new batch.



You may have used too much oil, not mixed it enough.
Or the mayo may have gotten warm & separated.
