Pickled eggs without vinegar?!

Question: Pickled eggs without vinegar?
I want to try making pickled eggs, but I hate vinegar, so... how do I make pickled eggs without it? Do I just replace the vinegar with salt?

Answers:

Any acidic liquid would provide the same effect as vinegar. You could try wine or vermouth or a citrus juice to replace the vinegar or you could go for something completely different and try the recipe below for Tea Eggs.

Ingredients;

1/3 cup dark soy sauce
1 tablespoon lapsang souchoug tea leaves
1 star anise
12 hard cooked eggs-cooled under running water, but still in their shells
2 teaspoons sesame oil

Directions:

In a medium saucepan, combine the soy sauce, tea leaves, and star anise with 1/3 cup water. Bring to a boil. Meanwhile, dry the eggs off and gently roll them, using the palm of your hand, to crack the egg shells lightly until they are covered with fine cracks. Add the eggs, shell and all to the boiling liquid. Reduce the heat and simmer for 30 minutes. Remove from the heat and allow the eggs to cool in their own liquid. After the eggs have chilled, remove the shells and coat in sesame oil

In this case, the soy sauce provides both the acid and the salt.

my mom used to make em with pickled beet juice. you can by pickled beets in the canned vegetable isle usually on the top shelf in a glass jar.
i am sure there is vinegar in them but i never noticed a vinegar taste.

You can't make pickled eggs without vinegar. Pickled beet juice contains vinegar. If you just replace the vinegar with salt, all you will have is boiled eggs with salt.

Why do you want to make pickled eggs when you hate vinegar?

Vinegar means pickling, salt is used first to extract water, so vinegar is absorbed.
