This is about as basic as you can get and from this you could skip the soup mix, ketchup and bread crumbs.
I will be pretty tasteless, but the eggs might hold it together.

I would suggest you skip the meat loaf plan for tonight and suggest you make a simple stew with the mince and onions. It will also taste pretty bland unless you have something to add for some flavour.

I hope you have read and eggs. Here is how i do it.

Crumble two pounds of ground beef in a large bowl.

In a food processor, reduce two slices of sandwich bread to fine crumbs, add to the meat.

Chop a medium Onion and add to meat.

If you have garlic, add minced garlic to the meat. To taste
Add salt and pepper o taste
Spices - all of these are to taste and strictly optional, if you don't have it or don't like it, leave it out
Garlic Powder
Chili Powder
Curry Powder
Ground Cumin
Emeril's Essence (you can buy t or get the recipe on line to mix yourself)
Mustard -Add a couple or three good squirts, maybe two TBS, or more to taste
Ketchup -add about twice as much as the mustard
Add 1 EGG lightly beaten.

Line a baking pan with aluminum foil. Turn up the edges and crimp the corners to contain grease and meat juices. ( I always use a double thickness>) preheat your oven to 350*F.

If you have latex or vinyl gloves this would Be a good time to put them on.

Mix everything by hand until well mixed.

Form the meat mixture into one or two loaves Of your preferred shape, place on the foil liner.

Coat the entire surface of the meatloaf with a generous covering of ketchup.

Place in the oven and bake until internal temperature reaches 165*F. That will take anywhere from an hour to and hour and a half. Use a thermometer if you have one.

Good luck.

no eggs, ketchup, or bread, pepper, garlic powder?

1 egg, 2 pieces of toast (crushed or crumbled) add onions and ketchup (about 1/2 cup) add some pepper to taste sometimes I use crushed red pepper instead of black, sprinkle 1/2 tablespoon of garlic powder mix in all in a bowl, make a loaf out of it in a pan. (doesn't have to be a loaf pan cake pan works fine) cover the top of it with some more ketchup ( I also use a little maple syrup) add a little garlic powder on the top.

Cover the pan with tin foil and cook 30 minutes @ 350
uncover and return to oven, another 20 minutes or watch for the edges to darken

Not my normal recipe, I like add a few extra spices and lace bacon over the top and I put cubed potatoes in the pan to soak up the juices Called a heart stopper meatloaf!

can substitute bread with crackers

2 lbs ground beef
one envelope lipton onion soup mix
10 saltines
1 egg
1/4 cup Ketchup

Mix all together and bake at 375 for one hour.
