Question: I need help with an excellent shrimp dish?
I am having a simple dinner for my MIL's birthday next saturday.The only meat she eats is fish and shrimp.So I really want to make this shrimp dish stand out.Any suggestions along with what to serve with it will be much appreciated.Thank you.

I have two shrimp recipes that I'd like to share. Hopefully one of them will have the types of flavors your MIL likes

Stuffed shrimp

Ingredients

For stuffing :
1 cup chopped mushrooms
3 tablespoons minced onion
2 tablespoons minced celery ribs
1 tablespoon minced garlic
3 tablespoons finely chopped fresh parsley leaves
3 tablespoons unsalted butter
1/2 pound scallops, chopped, or lump crabmeat, picked over
1/2 cup chicken broth
32 Ritz crackers, crushed into coarse crumbs

18 jumbo shrimp, shelled, leaving tail and connecting shell segment intact
2 tablespoons unsalted butter
1/4 teaspoon paprika

Garnish: chopped fresh parsley leaves

Accompaniment: lemon wedges

Method
Preheat oven to 375° and butter a large baking dish.

Make stuffing:
In a large heavy skillet cook mushrooms, onion, celery, garlic, and parsley in butter over moderate heat, stirring occasionally, until softened and liquid mushrooms give off is evaporated. Add scallops or crabmeat and cook over moderately high heat, stirring, 3 minutes. Stir in broth and cracker crumbs and remove skillet from heat.

Butterfly shrimp by cutting lengthwise along inside curve, almost completely through. Split open shrimp and devein. Mound about 2 tablespoons stuffing onto each shrimp, pressing gently, and put shrimp, stuffed sides up, in baking dish. Melt butter and drizzle over shrimp. Sprinkle shrimp with paprika and bake 20 minutes, or until stuffing is golden.

Garnish shrimp with parsley and serve with lemon wedges.



Shrimp Tourkolimano

Shrimp Tourkolimano is one of my favorite Greek dishes. I often order it when I go out for Greek food. This is my interpretation of that dish.

While I believe deveining shrimp is simply a matter of personal preference, I like to apply that method here. In fact, I slice into the back of the shrimp a little more deeply than is necessary for deveining. The cut shrimp will curl under itself when it is cooked and the two cut sides will open like a flower, making for a lovely presentation.

Ingredients
3 pounds raw large shrimp; shelled [leave tail on]; deveined
1/4 cup fresh lemon juice
1 stick unsalted butter, cut into pieces
2 cloves garlic, finely chopped
3 large tomatoes; peeled, seeded, rough chopped
1 1/4 teaspoons Mediterranean oregano
coarse salt
freshly ground black pepper
1 lb traditional Feta cheese, crumbled

Method
Sprinkle shrimp with lemon juice and set aside. Melt butter in large skillet. Add garlic, sauté; add chopped tomato, cook 3 to 4 minutes. Add shrimp. Season with oregano, salt and pepper to taste. Turn shrimp frequently, sautéing until pink. Add Feta cheese; stir lightly to melt. Use tongs to carefully remove shrimp to serving platter. Spoon tomato-cheese mixture over shrimp. Garnish with fresh chopped parsley or fresh sprigs of Mediterranean oregano. Serve with crusty bread.

Shrimp Scampi

4 tsp olive oil

1 1/4 pounds med shrimp, peeled (tails left on) and deveined

6-8 garlic cloves, minced

1/2 cup low sodium chicken broth

1/2 cup dry white wine

1/4 cup fresh lemon juice

1/4 cup + 1 T minced parsley

1/4 tsp salt

1/4 tsp freshly ground pepper

4 lemon slices

In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, 2-3 min. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter, keep hot.

In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp. Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.
Ladel over thin pasta ( angel hair )



shrimp curry
Ingredients:
? 2 Cups cooked shrimp
? 1/2 Cup onion (minced)
? 8 tbsp Flour
? 2 tsp Curry powder
? 2 tsp Granulated sugar
? 1/4 tsp Ginger
? 2 Cups bottled milk
? 1 Chicken bullion cube
? 2 tsp Lemon juice
How to make Shrimp Curry:
? Dissolve bullion cubes in water.
Heat the butter.
Fry onions in butter.
Stir in flour, curry powder, salt, sugar.
Add bullion cubes and milk.
Cook over boiling water till thick.
Mix shrimp and lemon juice.
Shrimp curry is ready.



Fried shrimp and let everyone build there own po boy. Order bread from Gambinos if you have time. Shrimp scampi is easy and great with salad and french bread. Shrimp ettoufee over white rice. Hushpuppis with any of this . Shrimp boil with potatoes n corn and add mushrooms, a lemon cut in half, artichoke hearts, celery, whole garlic. Bring water to boil with zatarans shrimp boil, add all ingredients with a splash of oil. Don't add shrimp till 15 mins before finished. Otherwise to hard to peel. Serve with a dipping sauce of mayo, katsup, lemon juice, wisthershire, horseradish, and a dash of cajun seasoning.



~~~EASY SHRIMP SCAMPI~~~

-2lbs shrimp
-1 garlic clove
-lime juice
-parsley
-extra virgin olive oil
-butter
--cover bottom of skillet with oil add two tbls of butter. let melt. chop up garlic add to butter and oil. Let cook till garlic starts to turn brown. Then add shrimp. cook for 3-4 mins on each side. Add a splash of lime juice. Cook 1 more min. Top with parsley. Serve..

- it is realy good with a nice salad, broccolli alfredo, and garlic bread....I always make my own salad dressing..
- 1/4 cup bacon grease
-1/4 cup vinegar
-1/2 cup sugar
-1tbls seasoning salt
-1tbls garlic powder
-1 teaspoon mustard
--put all these ingredints in a pot. Cook to a boil. let cool toss in the salad...this dressing is realy heavy, so you wont need a whole lot.. depending on how much salad you make
YUM YUM YUM...MY FAVORITE....!!!!!!!!!!



Search for Shrimps in Green Sauce, a delicious spanish meal made with lots of garlic and parsley, I serve it with white rice. Its really fabulous.
