Question: Hot Chocolate Mix instead of Cocoa Powder?
Okay so i want to make this brownie recipe - ? cup butter (170 g)
1+? cup sugar (330 g)
2 teaspoon vanilla
3 eggs
? cup all-purpose flour (85 g)
? cup cocoa powder (50 g)
1 teaspoon baking powder

But i don't have enough cocoa powder so could i use hot chocolate powder instead?
How much sugar should i cut back on?
And do I need to use more hot chocolate powder in the recipe?

I don't have time to go to the shops, thanks :)

There is barely enough cocoa in one of the packets of cocoa mix to be called cocoa in the first place.
Use unsweetened chocolate. Or even semi sweet chocolate rather than the packets. For the unsweetened chocolate you would not need to adjust any of the ingredients. If you use the semi sweet chocolate chips or bar you may want to decrease the sugar just a bit.
Melt the chocolate with some of the butter then proceed with the recipe as written.



Yes that should work. I would assume that cocoa powder is about half cocoa half sugar and take it from there. You didn't say how much you were using so I cannot give you the exact numbers. For example if you are using 1/4 cup chocolate powder, cut out 2 tablespoons sugar and add two more tablespoons chocolate powder (so a total 1/4 cup + 2 tablespoons). Once you have mixed it taste it and see if you need more of either sugar or chocolate powder. You can also stir in some chocolate drops to boost the chocolate flavor.



I have been baking for over 15 years now and I would not use hot cocoa mix. There are other things in the mix that might interfere with your recipe. You can melt some regular baking chocolate or melt some chocolate chips to add some more chocolate flavor. Maybe 1/3 of a cup of melted chocolate. Your brownies may seem like they are not done but will set nicely when cooled. Do not over cook, keep within the suggested time. Hope this helps. : )



The hot chocolate stuff contains probably less than 50% cocoa powder, and the rest is mostly sugar. If you don't have at least 1/4 cup of cocoa powder, I wouldn't attempt substituting any of the mix.

That's assuming that your hot chocolate mix even contains real cocoa powder...
