Please help! My caramel icing seems gooey?!

Question: Please help! My caramel icing seems gooey?
I made an apple cake. My mother in law makes caramel icing for her apple cake all the time so she came over to teach me how. Well she did it how she always does but for some reason it seemed thinner than normal so we cooked it a bit longer and then used the mixer. We mixed and mixed for what seemed like an hour. Finally she said to go ahead an ice the cake, so we did, and then she said she was worried it may be too gooey! She said to let it sit and it may set up! Well its been sitting for over an hour now and it hasnt changed!!! Its still pretty gooey and it has a shine to it so you can tell. Since the cake is ALREADY iced is there anything to help it set up or am I just stuck serving gooey caramel apple cake? Im bummed cause this cake is for my moms bday and I want it to be perfect. This is just my luck, to have her come help and then it flops. Go figure!

Thanks!

If you stick it in the fridge it will set better answer mine?

I think you will have to eat it being gooey. But it sounds very good. I bet your Mom will live it. Some times things don't always turn out the way we want them to but they still taste very good!

High humidity in your kitchen can sometimes affect certain foods. Cake frosting are especially vulnerable

I think you're just going to have to sever the cake like this unless you make a whole other cake WITH icing... maybe this time your mother-in-law should make it?

Don't want to sound mean :S
