White chicken chilli recipe?!


Question: White chicken chilli recipe?
How can I make this recipe a little less spicy but without ruining all of the great flavor of the dish?
Last time I made it I used 3/4 of the red pepper, half the jalapenos and omitted the chillis all together but it was still a tad hot for my kids.


ingredients

* 1 tablespoon vegetable oil
* 1 onion, chopped
* 3 cloves garlic, crushed
* 1 (4 ounce) can diced jalapeno peppers
* 1 (4 ounce) can chopped green chile peppers
* 2 teaspoons ground cumin
* 1 teaspoon dried oregano
* 1 teaspoon ground cayenne pepper
* 2 (14.5 ounce) cans chicken broth
* 3 cups chopped cooked chicken breast
* 3 (15 ounce) cans white beans
* 1 cup shredded Monterey Jack cheese

Answers:

Leave out the cayenne - there's your heat source. Usually canned peppers aren't that hot, but you can leave them out, also, and substitute one (each) diced green and red bell peppers sauteed along with your onions and garlic. Add an extra teaspoon of salt and a dash of black pepper.

I've just perfected a very intricate, yet delicious, white chicken chili recipe! Too involved to share here.



The cumin adds heat as does the cayenne pepper, so cut back on these items, or eliminate and add chili powder instead.
You can always reduce the amount of jalapenno also, as they mostly add heat and really not much in flavor



I'd leave out the cayenne pepper altogether, and substitute green or yellow pepperoncini, (mild Italian peppers) for most, if not all, the other peppers. Lot's of flavor but not so hot.
