I'm looking to buy, or make edible glaze without sugar?!
Ideally it would have a shelf life, unrefrigerated, of about a year.

I guess you could just use honey.
you can make it with sugar alcohols or with either Splenda or that weedy stuff, Stevia.
Make a white sauce using a tablespoon vegetable oil, 2 tablespoons corn starch, 2 cups water, 1/2 to 1 cup Splenda, bring to boil and cook andd stir til it is thickened. You can flavor this any way you wish or color it too.
