Rinse beans and pick out any stones or brown ones, then cover w/2" of water and let stand in refrigerator about 6 to 8 hrs. Drain, and cover with water (or chicken broth), add one diced onion, 1 teaspoon cumin, a tablespoon of salt and fresh pepper to taste. Bring to boil and cover for about 1.5 to 2 hours. Check after 1.5 hours unless you want mushy beans (which I sometimes prefer, depending on what I'm using it for). Great served over yellow rice, and, for a meat element, saute some sliced keilbasa, and top with a dollop of sour cream and a few springs of fresh cilantro! Diced tomatoes add to the topping, too.
