Yes, they do, butter has a flavor that is very distinguishable and when you mix it into certain sauces it makes the sauce glossy and have a rich flavor. And olive oil, like butter, is used alot for its flavor as well, especially in vinagrettes or just as is.



It really depends on the entrees being prepared. Most chefs will use both at the same time. You see, olive oil has a low smoking point. The butter that is added will further stop the oil from burning. For example, you wouldn't be able to french fry chips with olive oil, as it would smoke too much and burn. Hope that helped.
