How do you cook a jacket potato?!

First you need to pre-heat the oven to gas mark 5, 375°F (190°C). To serve two people, wash two large Desirée potatoes weighing 8-10 oz each (225-275 g) and dry them very thoroughly with a cloth, then leave them aside to dry as much as possible. If you're using ready-washed potatoes you need not do this, as the high heat will purify them. Next, prick the skins a few times with a fork, then put a few drops of olive oil on each one and rub it all over the skin.
2. After that, rub in some crushed sea salt – this will draw out the moisture from the skin and, together with the oil, provide more crunchiness.
3. I used to put them in a hot oven but I've learnt over the years to get the crunch, they need to have slightly less heat and slightly longer cooking. So place the potatoes straight on to the centre shelf of the oven and let them bake for 1?-2 hours depending on the size of the potatoes, or until the skins are really very crisp. Learn to use the time when you're out, so they can be ready when you come home, or go and do something else and forget about them till they're ready.
4. When you are ready to serve, slit each potato in half lengthways. Next, with a fork, fluff the floury insides, then add a generous amount of butter and watch it melt and disappear into the clouds of fluffiness. Add sea salt and crushed black pepper, then eat and savour it alone in all its humble, simple glory. Serve immediately because, after you remove jacket potatoes from the oven, they lose their crispness very quickly, so don't let them hang around.
Either bake or boil it. to bake,wash well and lay on baking sheet or dish. put in oven 350 to 400 for about an hour. in microwave,, stab several times with fork, cook on high for 5 minutes, turn and do another 5 minutes for small to medium potato. To boil, bring ketttle of water to boil, toss in potato for about 15 minutes. cook til you can stab it with fork easily.
No worries, I'm a chef and even I took awhile to devise the right 'recipe' to have crisp skin without being burnt with a super-fluffy interior!!!!
1 Preheat oven to 190°c
2 Rub potatoes skins with oil and sprinkle with salt
3 Place potatoes straight on the middle shelf of the oven (no tray)
4 Bake for 1-2hrs (set timer for an hour and then 15min intervals after that)
5 The potato is cooked when you can easy poke through to the middle of the potato easily.
This method has a lower temperature and a longer cooking time to ensure success.
I'm a chef and I've done quite a bit of trial and error to come up with this...that probably my grandmother knew off by heart!
They have nicer jackets if you bake them on low for an hour and a half put on a greased baking tray dont cover choose large baking potato's wash prick and rub a small amount of olive o oil on the skin and some salt if you like as it crisps the outside for energy conservation you can have them in the oven with a casserole at the same time - smells wonderful or a rice pudding which needs to be on low - but seriously get yourself a recipe book out of the library they are easy to follow especially if you have pictures of what things are supposed to look like . The potatoes are exceptionally hot when they come out you can split them and put toppings on - I couldn't cook at all when I left home but really got inot it - It was so amazing to find out that things come out right with very little effort - You can get all fired up about trying new recipes and adding little tastes of your own -
