Craig Watson-Eggs technically do not have to be refrigerated IF they will be used within a day or two of purchase. Room temp eggs are perfectly fine and cook up very quick -which makes it great for diners & places that serve up lots of egg based breakfast entrees. In Western style food storage, food is refrigerated as a precaution...a method of preservation. However, in many places around the world, long term refrigeration isn't always an option, so foodstuffs are consumed in much smaller quantities and eaten in a shorter amount of time.

I have heard older family members talk about how they used to always keep their eggs in a wire basket under the kitchen sink without any problems of spoilage.



Eggs lose liquid from evaporation through the shell. That's why old eggs float and why they are better for hard-cooked eggs. Eggs would lose their moisture quicker at room temperature.



eggs don't be kept in the refrigerator area at the supermarket



Eggs do not need to be kept in the fridge. Simple as that.
