Oriental Shrimp Fried Rice Recipe

Serves/Makes: 4 servings

Ingredients:

1 cup shrimp, peeled, deveined, and chopped
1 cup rice
1 1/2 cups broth
1/4 cup butter
1 egg, slightly beaten
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons soy sauce
1/4 cup onions, finely chopped

How to cook Oriental Shrimp Fried Rice:
Wash rice in cold water several times. Drain.
Add broth to rice in a saucepan. Bring to a boil, cover and simmer very slowly for about 35 minutes. Remove from heat and let stand covered for 15 minutes.
Heat butter in skillet. Add egg, scramble well, breaking it as it cooks. Add the remaining ingredients, blend well, and continue cooking 10 minutes. This can be made in advance.
To reheat, place in top of a double boiler over rapidly boiling water, until thoroughly heated.

SHRIMP FRIED RICE:

Perfect fried rice relies on chilled cooked rice. (If you don't want the vegetables just take them out)

3 tablespoons low-sodium soy sauce
2 tablespoons water
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
3 tablespoons vegetable oil, divided
1 1/2 pounds medium shrimp, peeled and deveined
3 large eggs, lightly beaten
2 cups finely chopped green onions
1 tablespoon minced peeled fresh ginger
4 cups cooked long-grain rice, chilled
1 1/2 cups frozen green peas, thawed

Combine first 6 ingredients in a bowl.

Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add shrimp; cook 4 minutes or until done. Remove from pan; keep warm. Heat 2 tablespoons vegetable oil in pan. Add eggs; stir-fry 30 seconds or until soft-scrambled, stirring constantly. Stir in onions and ginger; stir-fry 1 minute. Stir in soy sauce mixture, shrimp, rice, and peas; cook 3 minutes or until heated.

BEEF TERIYAKI

2 lb flank steak (about 2 large steaks)
1 cup dry white wine
1/2 cup soy sauce
2 tablespoons onion, minced
1 garlic clove, minced
1 tablespoon lemon juice, freshly squeezed
2 tablespoons honey
10.5 oz can beef broth, or:
1 cup homemade beef broth
1 teaspoon ginger root, grated

Slice steaks diagonally across the grain into 1/2 x 1-inch strips and place in a shallow pan or large bowl. Mix remaining ingredients and pour over meat. Let marinate 1 to 2 hours, turning 3 or 4 times. Thread strips on skewers and grill until meat reaches desired degree of doneness. Yield: 12 servings

GARLIC CHICKEN

2 teaspoons crushed or minced garlic, or 1/2 teaspoon garlic powder
1/4 cup olive oil
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
4 skinless, boneless chicken breasts

Preheat oven to 425 degrees. Warm garlic and olive oil in a shallow dish in the microwave to blend flavors. In a separate shallow dish, combine bread crumbs and Parmesan. Dip the chicken breasts in oil mixture, then in crumb and Parmesan mixture. Place in a shallow, lightly greased baking pan.

Bake in the oven for 30-40 minutes, until chicken is no longer pink and juices run clear, and coating is golden brown.
