Make a Campbell's soup meal in a crockpot, like chicken thighs in a garlic, sherry, and mushroom sauce over brown rice with steamed asparagus and a green salad. For dessert, buy some individual little fruit tartlets and serve them with one nice chocolate truffle and a delicious cup of coffee.
You will have to make the brown rice, either on the stove or in a rice cooker.
For the asparagus, just get a package or 2 of frozen asparagus and prepare according to package instructions. Don't overcook it. Serve it topped with butter and sprinkled with a little Parmesan cheese. I'm thinking you can prepare a nice little green salad with a vinegrette dressing.
For the main dish, ingredients:
6 or 7 chicken thighs
flour
2 tablespoons extra virgin olive oil
3 large cloves of garlic, slivered
1/4 tsp cayenne pepper (optional)
1/3 cup cooking sherry
10 fresh mushrooms, sliced
1 can Campbells cream of mushroom soup
Directions:
Put a few tablespoons of flour on a plate. Rinse and lightly dry the chicken thighs, then dredge them in flour until coated. Heat the olive oil in the frying pan over medium high heat. Add the slivered garlic to the pan and toss them in the oil until they begin to cook, about a minute. Add the chicken pieces to the pan. You are going to want to just brown the chicken, not cook it. So put it in skin side down in the oil on medium high heat, adjusting the heat down if you need to to keep anything from burning. If you need to add a little more oil, do. And keep things in the pan moving enough that it does not burn, including the little garlic slivers. When the chicken is browned on one side, turn it to the other side, and let it brown there.
When both sides of the chicken have golden browned, but before the chicken is cooked, remove them to the crockpot. Leave the heat on under the frying pan, and add the sliced mushrooms to the pan. Mushrooms soak up oil, so you may need to add just a bit more oil to keep them from burning. Keep them moving and keep scraping the bottom of the pan lightly as you move them until they begin to soften, which will take only a couple of minutes.
As soon as they are a little softened and have absorbed some of the pan flavors, add the cooking sherry to the pan, turn off the heat under the pan, and scrape to remove the pan drippings and dissolve them in the sherry. This is called deglazing the pan. Once the pan is deglazed, add the cream of mushroom soup, concentrated, straight from the can, without water added. Just open the can and add it to the mushroom, sherry, pan drippings. Blend until you have a thick sauce. If you choose to add cayenne pepper, you may do so at this point, when you are blending the sauce.
Pour the sauce over the chicken thighs in the crockpot, put the lid on the crockpot, and cook on low heat for 5 hours.
Serve over rice with asparagus, maybe some croissants, a green salad, and a fresh fruit tartlet for dessert.
